This yummy recipe can be used in many different ways.
- 1 eggplant large
- 2 cups stewed tomatos glen muir organic cannes
- 1 tablespoon olive oil
Cut eggplant into cubes. Heat skillet with 1 tbsp olive oil . Add 2 cans (approximately 2 cups) of Glen Muir Organic Stewed Tomatoes. Cook unto eggplant becomes soft. That’s it!
You can use this recipe so many different ways.
- Serve over spaghetti squash as an appetizer.
- Serve as a side dish to some dark leafy greens.
- Serve as a hors devour with cut up celery sticks.
