Eggplant Ratatouille

This yummy recipe can be used in many different ways.

Ingredients

  • 1 eggplant large
  • 2 cups stewed tomatos glen muir organic cannes
  • 1 tablespoon olive oil

Directions

Cut eggplant into cubes. Heat skillet with 1 tbsp olive oil .  Add 2 cans (approximately 2 cups) of Glen Muir Organic Stewed Tomatoes.  Cook unto eggplant becomes soft. That’s it!

You can use this recipe so many different ways.

  • Serve over spaghetti squash as an appetizer.
  • Serve as a side dish to some dark leafy greens.
  • Serve as a hors devour with cut up celery sticks.
